Metal vs Ceramic knives



Which do you think is better? Ceramic or steel?

The truth is, there is no universal material that is suitable for every situation. Every material has its pros and cons:

Ceramic:

Ceramic knives are typically thinner and just as sharp as their steel counterparts, but what makes them unique is that they are made of zirconia, a material much stronger than steel so you can retain a sharper edge longer. It is not made of metal so it doesn't conduct electricity, and because it is ceramic, it also lightweight with virtually no porous, so it is less likely to transfer odors from one food to another. However, ceramic does have drawbacks, because it is made with a harder material, it is also harder to sharpen. The thinner blade meant it would brittle more easily, if mishandled. It is also expensive to make due to the scarcity of zirconia and the amount of it takes to manufacture them.








Metal:

Steel knives whether it is stainless steel or carbon are often preferred because of their low price and sharpness. Although metal requires sharpening from time-to-time, it is easy to sharpen, as long as the material that is being used to sharpen the knife is equal or better in terms of hardness and because metal knives are generally thicker, they are more likely to cut food that are not easily sliced such as bones, frozen food, etc. The weight of the knife also helps the blade slice as clean as possible. The only drawback for metal knives is it's hardness, stainless steel need to be sharpened the most, while carbon steel is much stronger, it is harder to sharpen with conventional equipments. All in all, it is all about preference, there is no "right" choice. What you choice should depend on what the job is for and if you can cope with the drawback(s) of your knife.

Advice:
-DON'T buy As Seen On Tv products! Remember slapchop?
-You get what you pay for! The cheaper the knife; the faster it breaks.
-Brands do matter! Keep this in mind,"everyone has different standards".
-Try to buy it in person. You should try buying it in person,that way if found what you like, you can expect it to look the same when you bring it home.
-Avoid buying knives online! While ebay offers good deals on knives every once in a while, there is no guarantee that a product will arrive the same as shown on pictures.
